Ingredients

3 potatoes, peeled and cubed
1 (16 oz.) pkg. fresh baby carrots, quartered
1 large onion, chopped
3 celery ribs, sliced
1 (12 oz.) pkg. frozen cooked meatballs
1 (10 1/2 oz.) can tomato soup, undiluted
1 cup water
1 (10 1/2 oz.) can beef gravy or 1 cup white sauce with 1 packet gravy mix
1 envelope onion soup mix
2 tsp. beef bouillon granules

Instructions

  1. Layer the potatoes, carrots, onion, celery, and meatballs in a 5-quart slow cooker.
  2. In a bowl, mix the remaining ingredients together.
  3. Pour over the meatballs and vegetables.
  4. Cover and cook on low for 9-10 hours or until the vegetables are tender. 

Notes

  • Feel free to adjust the vegetables based on what you have on hand—add an extra potato, reduce the carrots, or swap in other favorites like green beans or bell peppers.
  • Save leftover gravy! Gravy freezes well, so next time you have an extra cup or two, freeze it for a quick and easy addition to this recipe.
