Crustless Sweet Potato Pie

This is a cross between a sweet potato pie and the traditional sweet potatoes and marshmallows. It’s the best of both dishes combined into one delicious recipe!

Ingredients

Units

6 cups warm sweet potatoes, mashed
1 cup milk
1 egg
5 Tbsp. margarine, softened
1/2 cup brown sugar, packed
1 1/2 tsp. cinnamon
1 tsp. vanilla
3/4 tsp. allspice
1/2 tsp. salt
1/4 tsp. nutmeg
18 large marshmallows

Instructions

  1. Preheat oven to 325°.
  2. In a large bowl, mix everything except the marshmallows.
  3. Beat well.
  4. Pour into a greased 2 1/2 quart baking dish.
  5. Bake uncovered for 40-45 minutes (just to heat through).
  6. Top with marshmallows.
  7. Bake about 5 minutes longer or until marshmallows turn brown.
