This easy rocky road brownies recipe is a quick and easy way to serve delicious fudge brownies in the style of rocky road ice cream! These are perfect for family get-togethers, parties, church potlucks and any other special get-togethers, but you can also just make them for yourself when you have a chocolate craving. Rocky road is most often made with almonds, but you can use any kind of nuts you like. Macadamia nuts, walnuts, peanuts and pecans are great options that add wonderful tastes and textures!
The easy brownies recipe calls for mini marshmallows, but if you have some larger marshmallows, like those giant campfire marshmallows you brought home after camping, you can cut them into smaller pieces with a clean pair of kitchen scissors and use them in place of the mini marshmallows. If you have marshmallows that have gotten a bit stale, this recipe is a great way to use them without wasting them.
You can garnish the tops with colored marshmallows for a more festive feel.
For even richer rocky road brownies, you can add caramel candies or caramel ice cream topping to the top before adding the marshmallows and nuts.
To help the brownies stay together, I like to cut them with my stainless steel cut and serve turner, which makes it easy to cut the brownies and lift them out of the pan without mangling them. Of course, if you mangle a few of them, don’t let them go to waste – Broken rocky road brownies make great ice cream topping, especially with rocky road ice cream!

Rocky Road Brownies Recipe
Ingredients
1 pan brownies, baked
mini marshmallows
nuts, coarsely chopped
1 cup semi-sweet chocolate chips
3 Tbsp. butter or margarine
Instructions
- Bake your favorite brownie recipe.
- While the brownies are still hot, sprinkle with mini marshmallows and coarsely chopped peanuts or nuts.
- Melt chocolate chips and butter or margarine together.
- Spread or drizzle over the marshmallows.
If you want your brownies to be picture perfect for a special occasion, here are a few ways to accomplish that:
- Line your pan with foil before you bake so you can just lift the brownies out.
- Use a ruler and cut off the outer edges, saving the scraps for snacking or crumbling on top of ice cream.
- Use a ruler to score the cutting lines. Cut them with a straight downward motion, not sawing.
- If you are cutting brownies with frosting, wipe off the knife between each cut.
- Use a plastic knife to cut brownies without tearing.
