This Raspberry Rhapsody Salad Recipe makes a refreshing light salad to go with your dinner, to serve as a dessert or as a nice treat when your friends come over!
Raspberry Rhapsody Salad Recipe
6 oz pkg. raspberry Jello
2 cups boiling water
2 cups raspberry sherbet
1/2 to 1 cup frozen or fresh raspberries
Dissolve Jello in boiling water. Add sherbet and stir until melted. Add raspberries and chill until set. You can change the Jello to orange and use orange sherbet and mandarin oranges or strawberry Jello with strawberry sherbet and strawberries.

Oh my goodness, what a tasty recipe! We made this last night for supper with orange sherbet and mandarin oranges and it was delightful. I did have to have a little substitution because what I thought was a mostly full container of orange sherbet, turned out to be about 1 cup. I had some chocolate chip ice cream though, so I substituted a cup of it to go with the orange. It made kid of an orange dreamcicle type with a tiny chocolate flavor (I love orange and chocolate anyway. YUM!) I can’t wait to try the raspberry.

We used to make a green (lime jello) plus whipped cream add a glass jar of maraschino cherries stemmed and halved when the jello.
Cream mixture thickened we would fold in the cherries and put it in a ring mold to chill in the fridge to firm. More like a dessert than a salad. To make a green jello a salad we added lemon juice and sour cream and shaved Cucumber slices that were salted then strained rinsed drained well and folded into the jello mixture as it thickened poured into molds and served the following day. For a few years jello actually had salad jello flavors on the market. But palates turned away from aspic salads, and the salad making jello was discontinued.

Not sure about your question Ellie. It says in the recipe to dissolve the jello in the water, stir in the sherbet until melted – that means to stir it into the dissolved jello and water- add the berries to it and chill.

My jello is not setting up.it is runny and I followed the directions. What can I do to make it firm up ?

Not sure what could have happened – did you use a 3 oz pkg of jello instead of a 6oz. The only thing you could maybe do is to use it for syrup on pancakes or ice cream or you could maybe try to reheat and add another small pkg of jello. It is hard to tell what happened with out being there I am afraid.
