Here is our family’s favorite easy potato soup recipe! This potato soup has been in our family for years and it’s a HUGE favorite! Of course how can you go wrong with bacon in it! If you don’t know how to make potato soup, you’ll see that it is super easy! It tastes like a gourmet baked potato with bacon and the entire family will love it! You can find this recipe in our Dining On A Dime Cookbook, Volume 1.
PrintEasy Potato Soup Recipe
- Yield: Makes 2 quarts
Ingredients
6 medium potatoes, peeled and cubed
water
2 chicken bouillon cubes
2 slices bacon, fried and crumbled or 1 Tbsp. bacon grease
pepper (to taste)
salt (to taste)
2 cups American cheese
1 tsp. onion salt
4 cups milk*
Instructions
- Place the potatoes into a Dutch oven.
- Add enough water to cover the potatoes.
- Boil until the potatoes are tender.
- Drain and add the rest of the ingredients.
- Cook just until heated through. Do not boil.
Notes
*You can use dry milk in place of milk. If you plan to use dry milk, do not drain the water. Just add the dry milk to the water.
Potato Bacon Chowder Soup Recipe
This Potato Bacon Chowder Soup Recipe makes a hearty and delicious soup that is perfect for cool winter days!
- Yield: Makes 4 servings
Ingredients
8 slices bacon, cut
1 cup chopped onion
2 cups cubed potatoes
1 cup water
1 can cream of chicken soup (regular small can)
1 cup sour cream
1 3/4 cups milk
1/2 tsp. salt
Dash pepper
2 Tbsp. parsley, optional
Instructions
- In a kettle, fry bacon until crisp.
- Add onion and sauté 2-3 minutes.
- Drain.
- Add potatoes and water.
- Bring to a boil.
- Cover and simmer 10-15 minutes until potatoes are tender.
- Add soup and sour cream.
- Gradually add milk.
- Add salt, pepper and parsley.
- Heat until warm. Do not boil.
