Here is a good pineapple side dish recipe to go along with the ham that a lot of you may be having for Easter.
Pineapple Bake Recipe
1-20 oz. can pineapple chunks, drained (save the juice)
1/2 cup sugar
3 Tbsp. flour
1 cup grated cheddar cheese, (if you grate it yourself, it melts better.)
Mix and place in greased 8×8 pan or 1 quart casserole dish.
Topping:
1/2-1 cup crushed Ritz crackers
1/4 cup (1/2 stick) melted butter
3 Tbsp. reserved pineapple juice
Mix and sprinkle on top of pineapple mix. Bake at 350° for 30 minutes. until cheese melted and golden.

What kind of cheese should be used? The recipe only says “1 cup grated cheese”.

Thanks for asking Donna. We are doing find and didn’t get hit. My son lives on the edge of town and he got a good amount of hail and wind but here in the center of town we got nothing. The past year or two has been really strange because the storms (snow storms too) circle the city and are hitting hard but keep missing us – not that I am complaining. It was a little creepy though because every direction I looked it was black as night and huge clouds but dead center above me the sun was shining like a bright spring day. Hard to explain but was a little weird. I feel so bad for the people in OK though because they keep getting hit so hard.
