Easy Peanut Butter Snack
1/4-1/2 cup honey or corn syrup (to taste)
1 cup dry milk
1/2 cup peanut butter
Combine all the ingredients and roll into 1-inch balls. These can then be rolled in coconut, sunflower seeds, granola or nuts. Store in an airtight container. Makes 1 dozen.

I used to make this with my kids and they loved it! I called it Peanut Butter Sculpture because they could sculpture it into any shape and decorate it with chocolate chips, coconut, nuts, anything they like. It was fun, delicious, easy and healthy! Now I make it with the grandkids and neighbor kids. We’re the neighborhoos grandparents. hehe

Any idea what to use instead of the dry milk for kids who are dairy free (and gluten free).

I seem to remember substituting soy milk powder. I think they turned out fine. I think they were smoother than with powedered milk. You could probably use whatever protein powder you like and turn out fine. Just try it. You are mostly after something that will absorb some honey to help it will stick together. I wonder if coconut flour would work…
Don’t be afraid to experiment, just do it on a small scale, until you find the combination you like.

this is very similar to the recipe from the Sweet Pickles kids cards program that my mom made me as a kid. It was always yummy.
