Nutella Filled Peanut Butter Cookies
1/2 cup butter, melted
1/2 cup brown sugar
1/2 cup granulated sugar
1 cup peanut butter
1 large egg
1 tsp. vanilla
1 1/2 cups flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup chocolate chips
3/4 cup Nutella
Beat together the first 6 ingredients. Add flour, baking powder, soda, and salt. Mix well. Add the chocolate chips last. Place dough in the freezer for about 30 minutes.
Line baking sheets with parchment paper or foil. Spray with cooking spray if using foil.
Roll dough into 1 inch balls. Flatten and place 1/2 tsp. of Nutella in center of it. Top with another flattened ball. Then roll into a ball. Place dough balls on baking sheets about 2 inches apart.
Bake at 350 degrees for 12-15 minutes until the edges get crispy and brown and the tops start to crack. If they don’t start to flatten after the first 5 minutes, gently press down with the back of a spoon.
Let cool before serving. Makes 2 dozen cookies.
