Coconut Eggnog Pie Recipe

Ingredients

2 eggs
1 1/4 cups brown sugar, packed
3/4 cup eggnog
1/2 cup butter, melted
2 Tbsp. all purpose flour
1 tsp. ground cinnamon
Dash salt
2 1/2 cups sweetened shredded coconut, divided
1 graham cracker crust
1/4 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 425°.
  2. In a large bowl, beat the first seven ingredients until blended.
  3. Stir in 2 cups of the coconut.
  4. Pour into the crust.
  5. Sprinkle with walnuts and the remaining coconut.
  6. Bake on a lower oven rack 10 minutes.
  7. Reduce oven setting to 325°.
  8. Cover the top loosely with foil.
  9. Bake 45-50 minutes longer or until the filling is set.
  10. Cool on a wire rack. Refrigerate any leftovers.
