Beef Hash Recipe
1/2 lb. ground beef
1 large onion, chopped
1 large green pepper, chopped
1 (16 oz.) can tomatoes, cut
1/2 cup regular rice, uncooked
2 tsp. chili powder
1/2 tsp. salt
1/8 tsp. pepper
In large skillet, brown beef, onion, and green pepper. Drain fat. Add tomatoes, rice, chili powder, salt and pepper. Heat through. Pour into 2 quart casserole. Cover and bake 1 hour at 350°.

here is another hash recipe that was a favourite of my brother and sisters when we were growing up.
sorry no measurements as such.
hamburger about a lb
1 cooking onion chopped. salt and pepper to taste.
mix this with the hamburger and place in an electric frying pan or casserole dish for the oven.
potatoes sliced thin and place in a layer on the hamburger mixture.
pour over it all one can of consomme soup and one can of peas.
place in the oven or frying pan and turn to 350 bake until cooked about an hour.
as I said no measurements. It depended on how many it had to feed on how many potatoes mom used.
you can use frozen or fresh peas but be sure to add a can of water to equal the can of soup or it will be dry and very strong tasting.

I make this recipe on the stovetop. Just need to add a bit of water and decrease the cooking time. It is so simple to make after a long day at work and my husband always likes it. I also like to sprinkle cheese on top, but it’s tasty just as it is.

My mom made Hamburger Hash differently. She would brown 1 to 1 1/2 lbs ground beef in a skillet and drain. Add 1 bag frozen mixed vegetables and cube up 2 potatoes and add to the skillet. Add a cup or so of water or beef broth. Cook until potatoes are done. *really goood*! Season with salt, pepper or we like Celery salt in this too.
