How to Make The Pumpkin Bread
Believe it or not, you can eat delicious baked foods even when you are gluten free. This pumpkin bread is so easy to make you’ll want to try it today! he beauty of this recipe is you can make it in one bowl, so it makes for a super simple cleanup!
First, you will preheat your oven to 350°.
Then mix the wet ingredients together in a mixing bowl. After that, add the dry ingredients and water and mix. This should result in a thin batter that is about the consistency of pancake batter.
The bread is perfect like this, but if you prefer, you can add your choice of nuts or raisins. Pecans and walnuts are a particularly good choice. If you decode to go with raisins or nuts, stir them into the batter now.
If you like, you can experiment with adding other dried fruit bits instead of raisins.
Next, grease a loaf pan and coat the inside with gluten free flour. This will make it easier to get the pumpkin bread out of the baking pan when it is finished. This step is important because this pumpkin bread is so moist that you want to make sure it doesn’t disintegrate when you take it out of the pan.
Bake for one hour. When it is finished, you can stick a knife into the bread and when you pull it out, the knife should come out clean. If there is still batter on the knife, it is not quite done in the center and you can put it in the oven for a few more minutes.

Gluten Free Pumpkin Bread Recipe

- Yield: 1 loaf
Ingredients
1 1/2 cups sugar
2 eggs, slightly beaten
1/2 cup oil
1 cup pumpkin
1 3/4 cups gluten free all purpose flour
1 tsp. xanthan gum (if not in flour)
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/4 tsp. allspice
1/3 cup water
1/2 cup raisins (optional)
1/2 cup nuts (optional)
Instructions
- Preheat oven to 350°.
- Mix sugar, eggs, oil, and pumpkin in a bowl.
- Add dry ingredients and water in the order given. Mix well.
- Stir in nuts and raisins, if desired.
- Pour into a greased loaf pan floured with gluten free flour.
- Bake 1 hour (or longer, if needed).
- To test if it is done, put a knife in the center of the bread. If it comes out clean, it is finished.
- Serve with honey butter.
Notes
Honey Butter
½ cup dairy free butter, softened
½ cup honey
- Mix together until smooth.
- Store, covered, in the refrigerator.
This dairy free honey butter is great with cornbread, crackers, or bread. Makes 1 cup.
