Double Chocolate Chip Zucchini Muffins

Ingredients

2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup baking cocoa
1 1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1/2 cup vegetable oil
1 Tbsp. vanilla
1 egg
1/2 cup milk
3 cups finely shredded zucchini (do not drain)
1 1/4 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°.
  2. Line 2 muffin tins with paper liners or grease tins.
  3. Combine all ingredients except zucchini and chocolate chips in a large mixing bowl.
  4. Mix, just until combined.
  5. Fold in zucchini and the chocolate chips by hand.
  6. Scoop 3 tablespoons of muffin batter into each cupcake liner.
  7. Bake for 25-30 minutes.
