Double Chocolate Zucchini Bread

Ingredients

1 cup all-purpose flour
1/2 cup baking cocoa
1 tsp. baking soda
1/2 tsp. salt
2 large eggs
1/4 cup butter, softened
1/4 cup oil
3/4 cup light brown sugar, packed
1 tsp. vanilla
1 1/2 cups packed shredded zucchini
1 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°.
  2. Grease a 9×5 inch loaf pan.

  3. In a large mixing bowl, mix flour, cocoa powder, baking soda, and salt.
  4. Add eggs, butter, oil, vanilla extract, and brown sugar. Stir until smooth.
  5. Stir in zucchini, just until combined.
  6. Stir in chocolate chips.

  7. Pour the batter into the prepared pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out mostly clean.
