Easy Crockpot Menu – Citrus Fish Fillets – Quick No Bake Cookies
Tips:
- If your dishwasher is next to your sink, store your scrub brush and scrubbing pads inside it on the top rack. This way they are out of sight, they won’t drip anywhere and when you are done using them you can run them through the washing cycle.
- If you can’t get your children to eat kidney beans in chili, try blending the beans with some tomato paste in a blender and add that to the chili instead.
- Mix leftover rice with ground beef and an egg to make into meatballs.

Recipes:
Citrus Fish
2 fish fillets (slightly frozen is okay)
1 Tbsp. butter, melted
1/2 Tbsp. lime or lemon juice
1/8 tsp. black pepper
1/2 tsp. dried minced parsley (If you have fresh parsley, chop up 1-2 teaspoons.)
2 cloves minced garlic
Aluminum foil
Use a 4-6 quart slow cooker. Place the fish fillets on a piece of foil. Melt the butter. Stir in lime juice, pepper, garlic, and parsley. Brush the fish with this mixture. Fold the foil over and crimp the sides to make a packet. Place in the slow cooker. Cover, and cook on low for 1 ½- 2 hours.
Your fish is finished when it flakes easily with a fork.
Quick No Bake Cookies
1 (14 oz.) can sweetened condensed milk
2 cups (12 oz.) semisweet chocolate chips
3 cups graham cracker crumbs
1/2 cup chopped nuts
1 tsp. vanilla
powdered sugar
Microwave the milk and the chocolate chips for 1-2 minutes until melted. Stir until smooth. Stir in cracker crumbs, nuts and vanilla. Shape into a 17 inch log and roll in powdered sugar. Wrap in plastic wrap and chill for 1 hour. Cut into 1/4 inch slices.

This crockpot fish sounds really good so I’m definitely going to try it. I use my crockpot year round but I like using it more in the hot months because it doesn’t heat up the house so much. I also like your tip about storing sponges and brushes, etc., in the top rack of the dishwasher — makes so much sense in keeping things clutter-free!
