Ingredients

1 1/2 cups sugar
2 egg whites
1/3 cup water
1/4 tsp. cream of tartar
1 tsp. vanilla

Instructions

  1. In a saucepan, combine sugar, egg whites, water and cream of tartar.
  2. With a hand mixer, beat the mixture on low for 1 minute.
  3. Continue to beat on low speed over low heat until frosting reaches 160° (about 8-10 minutes).
  4. Pour into a large mixing bowl and add vanilla.
  5. Beat on high until the frosting forms stiff peaks (about 7 minutes).

Makes 7 cup. Frosts about two 9×13 inch cakes.
