This easy Chinese chicken recipe base can be used as a starting point for creating dishes like sweet and sour chicken, orange chicken, sesame chicken, and more. Juicy chicken pieces are coated in a light, crispy batter and fried to perfection. With a crunchy exterior and tender inside, it’s the perfect base for your favorite sauces and flavors. Serve it with rice or noodles and customize it to your taste for a delicious and satisfying meal every time.

Ingredients

vegetable oil, for frying
1 1/2-2 lbs. boneless chicken breast, cut into 3/4 inch cubes
1 cup all purpose flour
1/2 cup cornstarch
2 tsp. baking powder
1 tsp. baking soda
1 1/4 cups cold water

Instructions

  1. In a medium frying pan, heat oil on high (at least 1 inch deep in pan) until hot.
  2. In a medium mixing bowl, combine flour, cornstarch, baking powder, baking soda and water until smooth in consistency.
  3. Add chicken to batter and stir until coated.
  4. Drop coated pieces individually into hot oil, frying until cooked. (Otherwise, they will clump together.)

If you like, for a little extra flavor and color, you can also lightly sauté your choice of veggies like bell peppers, chunks of white onions and carrots and add them to your choice of sauce at the end, pouring a little extra sauce over the top when the veggies are added.

Notes

  • If you do not want the chicken to be breaded or if you are gluten free, you can season the chicken with seasoned salt and fry the bite sized pieces without the breading.
