This easy butterscotch muffins recipe makes moist and tasty butterscotch flavored muffins with a crumbly cinnamon and sugar topping that’s sure to please!

Ingredients
2 cups all-purpose flour
1 cup sugar
1 (3.4 oz.) pkg. instant butterscotch pudding
1 (3.4 oz.) pkg. instant vanilla pudding
2 tsp. baking powder
1 tsp. salt
1 cup water
4 eggs
1 tsp. vanilla
3/4 cup vegetable oil
Butterscotch Muffins Topping
2/3 cup brown sugar, packed
2 tsp. cinnamon
1/2 cup nuts, ground (walnuts, pecans, almonds, etc.)
Instructions
Preheat oven to 350°.
Mix all ingredients just until moistened. Try not to overmix.
Pour into greased or paper lined muffin cups so they’re 2/3 full.
Mix topping and sprinkle on the batter.
Bake 15-20 minutes, until a toothpick inserted in the center comes out clean.
