Homemade Cucumber-Buttermilk Dressing
1 cup buttermilk
1/4 cup cucumber, peeled and grated
1 Tbsp. Dijon-style mustard
2 Tbsp. green onions, white and green parts, or chives, minced
2 tsp. fresh parsley, minced or 1 tsp. dried parsley
1/4 tsp. dill, dried
1/4 tsp black pepper, freshly ground
1 tsp. lemon juice or vinegar
Combine all ingredients in a jar with a tight lid. Shake well. Refrigerate. Makes 1 1/4 cups.

I like this one because I don’t need lemon which I am very allergic to.
Not nice when you have a healthy salad and end up 5 min. later with a migraine and cranky 2 min. later. I think I will make it and when we go out of town and are forced to eat at restaurants I can pull my own dressing out.
Will make others look at me jealously when I have a great dressing and they have to put up with the house choice.

I love homemade salad dressings. So nice to be able to change your mind and whip up the kind of dressing you want when you want it! I have been trying to have salads at least 5 times a week ( we are not big on salads, and usually the price for us is too high in late fall and winter…. I have paid up to $5 for a head of lettuce for Christmas dinner when the girls were younger. Only because they asked for a salad at the dinner… lettus… not coleslaw, or jellied!). Summer is great when we can nip out into the garden and cut fresh greens and eat them. I wait each spring for dandilion greens and walking onions, for my first feast of the year!
