- First, you will add the marinade ingredients to a Ziploc freezer bag. Seal and mix the ingredients well to ensure all of the seasoning and spices are combined.
- Then add the chicken to the bag and mix again to make sure the chicken is coated well. Set aside for 10-15 minutes. You can leave it longer if you wish but that isn’t essential.
- While the chicken is marinating, preheat the oven and wilt the spinach in a skillet with the remaining olive oil. Once the spinach is ready you can set it aside.
- After 10-15 minutes, remove the chicken breasts from the marinade and place them in a baking dish. Spread the cream cheese over the chicken breasts and lay the spinach on top of the cream cheese. Sprinkle the mozzarella over the top.
- Then bake for 20-30 minutes at 400°.

Ingredients
2 large boneless skinless chicken breasts, cut horizontally
8 oz. cream cheese, softened
2 cups spinach, rinsed
2 Tbsp. olive oil, divided
1/2 cup Mozzarella cheese, shredded
1/2 tsp. garlic powder or 3 cloves garlic, minced
1/2 tsp. red pepper flakes (optional)
1/2 tsp. Italian seasoning
1/2 tsp. salt
1/2 tsp. black pepper (optional)
Instructions
- Place 1 tablespoon of olive oil along with the garlic, Italian seasoning, red pepper flakes, salt and black pepper into a Ziploc freezer bag.
- Seal the bag and mix.
- Add the chicken breasts to the bag.
- Seal the bag and mix it so the chicken breasts are covered in the marinade. Set aside for 10-15 minutes.
- Preheat oven to 400º.
- Wilt the spinach in a skillet with the remaining olive oil and set aside.
- Remove the chicken breasts from the marinade and arrange them in a baking dish.
