Cheesy Mashed Potatoes Recipe
This cheesy mashed potatoes recipe is a quick and easy recipe that makes mashed potatoes extra special and includes cream cheese and garlic! It takes just a few minutes to throw together and then 3-4 minutes under the broiler!
Ingredients
3–4 cups mashed potatoes
4 oz. cream cheese, softened in microwave
1 clove of garlic or 1 tsp. garlic powder, to taste
1 cup Mexican cheese blend, shredded
Instructions
- Mix potatoes, cream cheese and garlic.
- Place in a 1-quart greased baking dish.
- Sprinkle with cheese.
- Place under a broiler for 3-4 minutes until cheese is melted.
Be very careful removing this from the broiler as it will be very hot!

Looks and sounds delicious. Our family also has a recipe for using left-over mashed potatoes. Toast a couple slices of bread, then cut into cubes. Melt butter (or margarine) in a frying pan and toss the toast cubes in the butter, then add the mashed potatoes and heat through. Very tasty!

Just wanted to let you know my hubby loves my “cheesy potatoes” but I take the easy way.
Make and mash potatoes a dollop of butter, add cheese whiz ( I like lots, but you do it to the way you like it), then add about a cup of frozen peas. The heat from the potatoes thaws the peas and it is just like having fresh picked uncooked peas in the cheesy potatoes. I don’t make this often now because the cheese whiz has gone up so much in price. Am still looking for a good quick cheese sauce to make up that has a similar taste.
But when cheese whiz goes on sale ( or we are having guests) and I want a simple punch to the meal then this fits the bill.
