Cake Mix Cookies Recipe
Ingredients
1 pkg. cake mix (any flavor)
½ cup oil
2 eggs, slightly beaten
Instructions
Preheat oven to 350°. In large bowl, combine all ingredients. Blend well. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake 10-15 minutes or until set. Cool 1 minute. Remove from cookie sheets.
Note: Different cake mixes will act differently. Yellow cake mix spreads out more than the other mixes. See suggested variations below.
High Altitude: Add 2 Tbsp. flour and bake as usual.

Fluffy, Chewy Cookies: Add ½ cup flour.
Sugar Cookies: Yellow cake mix. Add 1 tsp vanilla.
Chocolate Chip Cookies: Yellow cake mix. Add 1 cup chocolate chips.
Double Chocolate Cookies: Devil’s food chocolate cake mix. Add 1 cup semi-sweet or dark chocolate chips.
Oatmeal Chocolate Chip Cookies: Yellow or white cake mix. Add ½ cup quick cooking oatmeal and 1 cup chocolate chips.
Oatmeal Raisin Cookies: Yellow cake mix. Add ½ cup rolled oats and ½ cup raisins.
Chocolate Oatmeal Raisin Cookies: Devil’s food chocolate cake mix. Add 1 cup semi-sweet chocolate chips, ½ cup rolled oats and ½ cup raisins.
German Chocolate Cookies: German chocolate cake mix. Add 1 cup caramel bits, ½ cup pecans and ½ cup coconut.
Chocolate Caramel Cookies: German chocolate cake mix. Add 1 cup caramel bits.
Black and White Cookies: Devil’s food chocolate cake mix. Add 1 cup white chocolate chips.
Birthday Cake Cookies: White cake mix. Add ½ cup sprinkles.
Rocky Road Cookies: Devil’s food chocolate cake mix. Add ½ cup marshmallows and 1 cup chopped almonds.
Chocolate Peanut Butter Cookies: Devil’s food chocolate cake mix. Add 1 cup peanut butter chips.
Chocolate Strawberry Cookies: Strawberry cake mix. Add ½ cup chocolate chips
Red Velvet Cookies: Red velvet cake. Add 1 cup white chocolate chips.
Cinnamon Spice Cookies: Spice Cake. Add 1 cup cinnamon chips.
Carrot Cake Cookies: Carrot cake. Add 1 cup white chocolate chips.
Lemon Cookies: Lemon cake mix. Add 1 cup white chocolate chips.
Butter Pecan Cookies: Butter pecan cake mix. Add 1 cup butterscotch chips.
Chocolate Mint Cookies: Devil’s food chocolate cake mix. Add 1 cup Andes mint chips.
M&M Cookies: White chocolate cake mix. Add 1 cup M&M’s.
Toffee Cookies: Yellow cake mix. Add 1 cup toffee chips.
Chocolate Cherry Cookies: Devil’s food or dark chocolate cake mix. Add ½ cup chopped candied cherries and ½ cup dark chocolate chips.
S’mores: Chocolate cake mix. Add: ¾ cup marshmallow and ¾ cup graham crackers, crushed.
Snickerdoodle: White cake mix. Add 1 Tbsp. cinnamon. Make balls and roll in cinnamon and sugar. Then bake.
Banana Split Cookies: White or yellow cake mix. Add 1 small box banana pudding, ½ cup chocolate chips and ½ cup maraschino cherries, chopped.
Dreamsicle Cookies: Orange cake mix. Add 1 cup white chocolate chips.
Cherry Chip Cookies: Cherry Chip Cake Mix. Add 1 cup chocolate chips.
Tutti Frutti: Yellow Cake Mix. Add 1 cup Fruity Pebbles.
Double Cookie Cookies: Devil’s food chocolate cake mix. Add ½ cup Oreos, crushed and ½ cup chocolate chips.
Cherry Delight: White cake mix. Add ½ cup dried cherries, ½ cup pecans, 1 Tbsp. fresh orange zest and ½ tsp. vanilla.
Raisin Spice Cookies: Spice Cake. Add 1 cup raisins.
Pumpkin Spice Cookies: Pumpkin cake mix. Add 1 cup pecans.

I made these today with vanilla cake mix, sprinkles, and chocolate chips. So good and easy. I’m not a great baker, but am learning. I added the extra flour since we are over 6,000 feet. Thank you so much! These are nice for a quick cookie fix, and with 3 kids 5 and under a quick dessert. I’ll be looking for sales on cake mix now :-)

Yes you do have your hands full with 3 under 5 Eleiie. :) And you need to keep a large supply of cookies on hand too. : ) Keep on baking because most of us started out beginners and the more you do it the easier it gets and better. Part of the reason we wrote Dining on a Dime was when Tawra and my daughter in law were first married they didn’t hardly know how to boil water so we saw a need for a basic cooking cookbook because so many didn’t know the basics so keep it up – you sound like you are doing great so far.

the cake mix recipe i am using calls for 2 eggs and 1 stick of butter = 1/2 cup looking for high altitude conversion as first time i made them was west coast altitude and they were perfect, this time at 2500 ft they were flat

Terri you might reread this recipe because it does have instructions on it for high altitude. A couple of other things is you can add a couple of Tablespoons of flour, and be sure not to use butter but use margarine because butter will make some cookie recipes spread and flatten really bad. But reread this recipe because it does have the high altitude on it.

Yes you can freeze them after they are baked. If you are talking about the dough you can keep it in the fridge for 3-5 days
