Easy Pancake Tip:
- When having a pancake brunch, mix your pancake batter up and freeze it in quart size bags. The night before you need it place in the fridge to thaw over night. The next day just clip the corner of the bag and pour on skillet. No messy clean up.
These pancakes are light and fluffy and so delicious!
Better Than IHOP Pancakes Recipe
1 1/4 cups flour
1 1/2 tsp. baking powder
2 1/2 tsp. sugar
1/2 tsp. salt
1/2 tsp. baking soda
2 Tbsp. vegetable oil
1 egg, beaten slightly
1 1/2 cups buttermilk (1/8-1/4 cup more if needed to keep batter thinner)
Add ingredients in order mixing with spoon. Pour on hot griddle*. When bubbles appear flip pancake.
*To know when a griddle is hot enough drop a couple of drops of water on it and they will crackle and pop when ready.

I’m just here to confirm that this recipe works. The pancakes came out pretty well, certainly better than pancakes you’d make with pre-made mix. Also, it would be a good idea to note that this recipe will make a good deal of batter, enough for about 10 reasonably sized pancakes.
