Homemade Egg Noodles Recipe

2 eggs
1/2 tsp. salt
1/4 cup milk
23 cups all-purpose flour

Instructions

  1. Beat eggs slightly.
  2. Add salt and milk.
  3. Mix in 2 cups of flour. Thoroughly mix with your hands.
  4. Add enough additional flour to make a stiff dough.
  5. Turn dough onto a well-floured counter or board; knead until smooth and elastic.
  6. Cover. Let rest for 10 minutes.
  7. Roll dough very thin.
  8. Cut dough into 1/8 inch strips to the desired length.
  9. Let dry 2-3 hours*, turning once.
  10. When ready to use, drop the noodles into boiling water or broth. Boil 12 to 15 minutes.
  11. If cooking in water, drain thoroughly.

Notes

*The noodles may dry longer if you need to make them in the morning for dinner.
