Pecan Pie Tarts Recipe

Ingredients

Crust:

1/2 cup sugar
1/4 cup butter, softened
1 (3 oz.) pkg. cream cheese, softened
1 large egg
1 3/4 cups all purpose flour

Filling:

1/3 cup light corn syrup
1/3 cup dark corn syrup
1/2 cup sugar
2 Tbsp. butter, melted
2 large eggs
1 tsp. vanilla
3/4 cup pecans

Instructions

  1. Mix sugar, butter and cream cheese until smooth.
  2. Add egg and flour. Mix.
  3. Dough will be sticky. Cover and chill 1 hour.
  4. Roll chilled dough into 1 inch balls.
  5. Press into the bottom and 2/3 of the way up the sides of each muffin space in a mini muffin tin.
  6. Preheat oven to 350°.
  7. Mix filling ingredients except pecans.
  8. Spoon into crusts.
  9. Top with pecans.
  10. Bake 18-20 minutes or until lightly brown. Makes 3 dozen pecan pie tarts.
