The barbecue beef sandwiches recipe starts with leftover pot roast, but you can use any kind of leftover beef you may have on hand. If you want to make the pot roast first, you can start it the night before and let it slow cook overnight. Then you will be able to make several meals out of it over the next few days including today’s easy barbecue beef sandwiches recipe.
Tips:
- Is my cantaloupe ripe? It is hard to tell when melons are ripe. Each person has his or her own special way. Here are two ways I have found that work for me:
- Smell the end where the stem was. If it smells like a cantaloupe, it is ripe.
- Gently shake the cantaloupe. If you hear the seeds sloshing around inside it is ripe. This is my favorite way to tell if a cantaloupe is ripe.
- Tuna can sometimes be messy in a sandwich so, for a different summer lunch, put tuna in ice cream cones for the kids. The flavor of the cone and the tuna really tastes good together.
- Need another way to use leftover mashed potatoes? Place leftover potatoes in a greased muffin tin and top with chopped onions, bacon or sausage, Parmesan cheese and a dab of butter. Bake at 400° for 15-20 minutes. Serve warm.

Easy Barbecue Beef Recipe
Here’s an easy and delicious barbecue beef sandwiches recipe you can make in just a few minutes! It’s a great way to use leftover pot roast!
Ingredients
leftover roast beef (pot roast)
barbecue sauce
3 Tbsp. water
Instructions
- Put leftover beef in a saucepan.
- Add water.
- Heat on medium until warmed through.
- Add enough barbecue sauce to coat the roast beef.
- Simmer for 3 minutes.
- Serve on buns, bread or toast.
Cottage Cheese Potato Salad
This cottage cheese potato salad is a cool and delicious salad perfect for barbecues and get-togethers! Fancier and heartier than regular potato salad!
Ingredients
1 cup cottage cheese
3/4 cup mayonnaise
2 tsp. salt (to taste)
1/4 tsp. pepper, to taste
3 hard boiled eggs, chopped
4 large potatoes, cooked and cubed
1 cup celery, diced
1/2 cup radishes, sliced
1/2 cup green bell pepper, diced
1/2 cup green onions, diced
2 Tbsp. sliced black olives
Instructions
- Mix the first 4 ingredients in a large bowl.
- Add the remaining ingredients.
- Mix well.
If you’re making this recipe for a get together, you can make this go very quickly if you slice and dice the veggies and hard boil the eggs the day before.
Easy S’Mores Bars Recipe
This easy S’mores bars recipe is an easy and delicious dessert recipe you can throw together in just 5 minutes and bake. It’s a perfect dessert for summer picnics and it’s also a great snack for kids!
Ingredients
8–10 whole graham crackers
1 package brownie mix
2 cups mini marshmallows
1 cup chocolate chips
2/3 cup chopped peanuts
Instructions
- Preheat oven to 350°.
- Arrange graham crackers in a 13×9 inch pan.
- Mix brownie batter according to the directions on the brownie mix package.
- Pour brownie batter over graham crackers.
- Bake 25-30 minutes, until a toothpick inserted in the center comes out clean.
- Sprinkle with marshmallows, chocolate chips and peanuts.
- Bake five minutes longer, until marshmallows are melted, puffy and golden. Cool before cutting.

I’d leave out the mayo but otherwise, I love that recipe for potato salad. I’m definitely going to try it. And your Yankee Noodles recipe that you posted a few months ago is one of my new favorites, too, because it’s so quick and easy.

I just love that tuna fish in a cone idea! Sounds like fun. Also, the potato salad and smores are recipes I can’t wait to try. You can put marshmallow cream on chocolate covered graham bars and that is good too. I bought some chocolate covered graham bars at Family Dollar and they worked out fine with marshmallow cream on them.

Left-over Mashed Potatoes
Another good way to use these is to toast a couple pieces of bread (or however many you need to stretch your potatoes)and cut into bite-sized pieces, melt some butter in a frying pan, stir the toast bits in, then add the potatoes until heated through and a bit crispy. Very tasty!

No Barb you didn’t. I thought everyone might have their own favorite recipe for bar be que so didn’t put one in especially since we have a couple of different ones in Dining. I don’t want to make the newsletters too long and can only fit in so many new recipes so sometimes if I don’t have room for what I call “basic” recipes I don’t put those in. I will say mashed potatoes, green beans, brownies etc. if I have other unusual recipes I want to put in the menu. I usually try to put a star by the items which have the recipe posted for them. Sorry if this threw you.

Tawra, I hope you are enjoying your new home and will continue to be blessed! I am so excited about the yard sales I have been to so far this summer! I have gotten some brand new dishes still in the box for $2.00 I mean it is brand new still in the box and is a eight place setting! and what is so neat it matches my kitchen perfectley. It even had a sugar and butter dish that the lady let me have for a quarter. I also found my dear hubby some nice t shirts for work for only 50 cents a piece and these are also new. I also was able to find a LL Bean fleece jacket for the fall that fits like it was made for me and I only had to pay $1.00 for it. Thanks for all the good receipes.I remember the saying my granny told me about canalopes “If it shakes, its ready to break” I know she was refering to the seeds inside.

Larry I’m not sure why this weeks threw everybody. Sorry. I usually put in a 2-3 recipes but it isn’t always a main dish. I don’t have room to put very many recipes in the newsletter (people would then holler it is too long) so sometimes if I think people have a basic recipe for something then I just say – mashed potatoes, roast, baked chicken, green beans etc. and add other new recipes in the menu.
Also we have some really good bar be cue recipes in Dining on a Dime and on the web site. This is just one of several others.

The BBQ recipe everyone is asking about is where you cooked a roast in the slow cooker then used it for different meals. For the BBQ beef place the amount you need for your family in a pan with 3 tbsp of water on medium to heat through. Then add just enough of your BBQ sauce to cover beef. Put on buns and enjoy !! I hope this helps. What I was writing about was to thank you for the S*Mores Bars. Believe it or not I have never tried them. Now I will.
