- Yield: 12-15 muffins
Ingredients
2 cups all-purpose flour
1 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup raisins and/or nuts (optional)
1 cup apple juice
1/2 cup applesauce
Topping Ingredients
2 Tbsp. butter, oil or margarine, melted
3 Tbsp. sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Instructions
- Preheat oven to 350°.
- In a bowl, mix together the first 5 ingredients.
- Add raisins and/or nuts, if desired. Stir to mix.
- Add apple juice, applesauce and oil. Mix well.
- Spoon into lightly greased muffin tins.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- To make the topping, place the melted butter in a bowl.
- Then mix the cinnamon, sugar and nutmeg in a nother bowl.
- While the muffins are still warm, dip each muffin into the melted butter and then the cinnamon and sugar mixture. If you like, you can also spoon the cinnamon and sugar mixture over the muffins.
Notes
- I like to line my muffin pan with muffin liners to make it easier to clean up.
- I usually make my muffins “rustic”, where I just pour the batter in and bake, but if you’re trying to make them extra pretty, you can smooth out the tops before baking. My boys snarf them down so quickly, I hate to spend too much time being OCD!

Thanks for pointing that out Hazel. Sometimes when we transfer things they get mixed up so I when in and fixed it all. It should have been 2 Tbsp. of oil or melted margarine. Check it again and I think it will make much more sense. Thanks again.

jill .. i have a ?? .. if u use a bread mix but u want it to be more like a cake instead of bread .. do you know what u need to add or change to make the mix more like cake than bread? (ex: banana bread changed to banana cake) .. i know u can make cookies out of the cake mixes (and now they sell those cookie mixes in the box in the stores) ..

I’m not sure Rose if I totally understand your question but like in your example of the banana bread into a cake well for something like that I don’t do anything different but change the pan I bake it in and maybe the time I bake it at. I have a banana bread recipe which I make into cupcakes and frost all the time and I have made it into a cake before doing nothing different.
Most quick breads you can do the same thing. Now I wasn’t sure if you were meaning something else like a yeast bread mix or a quick bread mix. So let me know if I got it wrong.

So the melted margarine goes into the mix, and then there is additional melted margarine for dipping before the topping? Or is the dipping margarine the 2T?

The 2 T. goes in the mix then melt a little more margarine to dip them in before dipping in the topping mix.

I do have one more question, though. Would it be okay if I used paper muffin liners, OR, do you recommend greased muffin tins due to the fruit? (I haven’t baked lately)

We are trying to do better about not eating fast food for breakfast. I have a high school son and a college age son who commutes to a local community college. They both have gotten into the horrible habit of swinging by the local Casey’s for a quick bite of breakfast. The other day they were both complaining about how their paychecks don’t seem to be going as far since school started back from Christmas. The boys and I sat down at the kitchen table to go through their checkbooks and low and behold, there were tons of ATM receipts logged to Casey’s and Quick Trip and they were small amounts. $6 here, $7 there. I knew it wasn’t for gas. Long story short, we are doing an experiment. I told them to each get $50 cash from their paycheck for “extras” and deposit the rest. We then mixed up a couple batches of muffins, cookies, breakfast burritos, breakfast sausage & cheese biscuits. I store them in the freezer, and they can wrap them in a paper towel and warm them in the microwave or put the cookies/muffins in a small plastic bowl and throw them in their backpack for a quick snack. Today is January 23 and amazingly, both young men still have $40 or more. My high school son has even been to a couple of school basketball games and had to pay his own way for one and the other he volunteered to work a shift in the concession stand so he could get in free. We will be adding your apple cinnamon muffin recipe to our rotation of freezer money saving breakfasts/snacks.

My son and I decided to make the apple cinnamon muffins and try them in our air fryer.
We have an instapot airfryer lid and basket. We used the individual silicone muffin cups (amazon) and filled each one 3/4 full. Preheated instapot airfryer at 350 for 5 min (airfry setting). Placed them in, baked for 10 minutes and they came out perfect. We decided to put a glaze on them like a cinnamon roll, thats they way i’ve always made my muffins. So delicious!!
You might want to add “airfry” to this one!

Hi Jill, yes my son has loved cooking since he was 3. He makes everyone eggs every morning, and always wants and does a lot of the main cooking every night. He would like to cook for a living. He’s 14. He loves ya’ll so much and loves trying all ya’lls recipes. (One of his favorites is sloppy joes and pizza dough). I’m very blessed to have children that loves cooking and want to cook. If he wants fries, he cuts up a potato, slices it, soaks it, then puts it in the air fryer. I was raised like you raised Tawra, and my parents love to watch ya’ll too and have your cookbooks, its like watching family! Blessings!
