Here’s a different way to use the leftovers from the relish dish.
Vegetable Vinaigrette
2 tomatoes, sliced (could use cherry tomatoes, too)
1/4 lb. mushrooms, sliced
1 cup broccoli florets (pieces of broccoli)
1 cup cauliflower pieces 1
cup vegetable oil
1/3 cup vinegar
2 tsp. oregano
1 tsp. each sugar, salt and parsley flakes
1/2 tsp. pepper
1/2 tsp dry mustard
1/4 tsp garlic powder or 2 cloves of fresh garlic crushed.
Mix and place all the veggies in a casserole dish. Combine the rest of the ingredients and pour over veggies. Cover and chill for 2-3 hours, stirring occasionally. Garnish with diced green onions.

Pickles to be ready in 1 hour.
slice some onion into rings as well as cucumber.
I like vidalia or spanish onions as they are sweeter than cooking ones and english cucumbers as you don’t have to peel them.
mix 2tbsp honey
2 tbsp vinegar regular or rice wine are nice but any type is good.
1/4 tsp of dried dill
pour this over the onions and cucumber cover and keep turning them over until ready to serve.
I found the recipe didn’t give me enough vinegar mix so I make more.
I also found it too sweet for me so I half the honey.
My husband loves the sweet so do it for your taste. but those are the 3 ingredients.
It keeps for up to a week in the fridge it just gets softer so not so crispy. When it is soft it makes a great topping for a change on hamburgers.

What kind of vinegar? White, apple cider, red wine vinegar?

White. Usually when a recipe calls for vinegar that means white and if you are to use something else it will state it. Years ago we didn’t have all the different types of vinegar. You had white or apple cider and then most didn’t use apple cider that much at all so the recipes always said vinegar and that meant white.
