This quick and easy cottage cheese salad recipe is a tasty and colorful way to take a break from regular veggie salads and sweet salads. Even though it has a pretty Christmas look to it it is great all year long.
Cottage Cheese Salad Recipe
This cottage cheese salad is a very quick and easy salad recipe. It is a nice cool recipe, perfect for summer and it goes with so many different meals!
- Yield: 4 servings
Ingredients
2 cups cottage cheese
1/2 green pepper, chopped
1/2 onion, chopped or 1/2 tsp. onion powder (optional)
1/2 tomato, chopped
2 tsp. chives and/or parsley (optional)
salt and pepper (to taste)
Instructions
- Mix all of the ingredients in a bowl.
- Salt and pepper to taste.
- Refrigerate at least 1 hour before serving (overnight is better).
Notes
You don’t have to use the ingredients exactly as stated above. I’m not fond of onions, so I don’t include them.
If you prefer more or less of an ingredient, you can adjust it to your taste.
You can also use other veggies like:
- radishes
- green onions
- white or red onion, chopped
- black olives
- cucumbers
- or whatever you have on hand

I made this salad last night. Very good. It was so hot when I came home from work, so I had a bologna sandwich with cheese and this salad and chips with that sour cream and barbeque sauce dip and Iced Tea from your cookbook. Very nice! Ahh.

I make this salad but I add 1/4 cup chopped onions and 1/4 cup diced green peppers along with a dash of garlic powder. Have been making it since I was 12. It is a great salad and my kids love it and make it for their kids.

I love mixing unsweetened applesauce and a little dash of cinnamon sugar to cottage cheese. Not really a salad but so good. It is not really pretty and I will not say what my kids used to say it looks like but everyone loves it.

what a great cottage cheese recipe… my wife does NOT like onions, so guess I could put what she does like… chunks of pineapple and or slices of almonds… this opens up the avenue to make a number of variations… I LIKE hot sauce… Nope, she won’t touch it if I do that… GREAT!

That is so funny CJ. My mom had cottage cheese and pears the other night and dad dumped a ton of pepper on it and I made a face and teased him about it. I said I could not believe he put pepper on cottage cheese and pears. I thought no one else did that at all. I will now have to eat my words. :)

my mother used to dice beets from the can. mix with a bit of mayo and or sour cream (not much) mix a bit at a time to consistency and taste you prefer.serve chilled. used to place bowl if ice and then the bowl with beets on top to serve outside. another relative would ad a bit of mild onion sliced thin or chopped and some pepper.
