Easy 4 Ingredient Polka Dot Cookies Recipe
1 package (18.5 oz.) devil’s food cake mix
1/3 cup vegetable oil
2 eggs
12 oz. white chocolate chips
Preheat oven to 350°. Coat cookie sheets with nonstick cooking spray
In a large bowl, combine the cake mix, oil, and eggs. Beat slowly with mixer until
well blended. Scrape bowl often. Batter will be thick.With a spoon, stir in white chocolate chips. Drop by teaspoonfuls 2 inches apart.
Bake 9 to 11 minutes, or until the cookies are firm. Remove to wire rack to cool.

Great cookies! I got the cake mix for $.69 at Aldi’s and the white chocolate chips for $1.29 and used 1/2 the bag as recommended. Big hit at our house!

I never made these cookies, but I made the Whoopie Pies using the cake mix and adding 1 cup of additional flour, and they came out great. You can take them to lunch at work or school, because the icing is between the 2 layers. Also, I froze some of the batter and defrosted it over the weekend and it came out great.

You can make these with any flavor of cake mix. Believe it or not no one at my house likes chocolate cake! Try it with lemon..our favorite! White cake is good, too. I don’t usually add choc. chips. You really must try the lemon…they’re AWESOME!

I can imagine how good the lemon would be. I have a grandson too who doesn’t like chocolate either. In a family of chocoholics we were wondering if we should do a paternity test. : ) : ) Anyway I am always trying to think of different cookies for him (it’s so hard for me to wrap my mind around the non chocolate thing you know) : )

We love cherry chip ones too. We have a Mennonite “expired” store in our area that always has cheap canned icing. We make the cake mix cookies, leave out the baking chips and spread with a little cherry icing. Also good for the funfetti mixes. I agree with Andrea as well, the lemon cookies are YUMMY! We roll ours in a ball then roll in powdered sugar before baking. Lemon crinkle cookies. Mmmm I think I may just have a mix in the cabinet!

I have got an abundant amount of chocolate cake mix and yellow cake mix…bought it free with coupons (about 10 boxes. I think I might try this idea! I bet yellow cake mix and brown chocolate chips would be good too.

Jana the sky is the limit. I wonder about peanut butter chips in chocolate or butterscotch chips in white or yellow and at Christmas they have peppermint chips that I bet would be good in white or chocolate. Were all going to be sooo hungry after this.

This recipe doesn’t use cake mix but it uses biscuit mix instead.
Easy Cookies
3/4 cup Bisquik or similar mix
1 small package of instant pudding (Any Flavor)
1/4 cup veg oil
1 egg
Mix all ingredients. Shape into balls using a teaspoon of dough. Place dough balls on ungreased cookie sheet and press flat. Bake for about 8 minutes at 350 degrees.
I bought some Pumpkin Pie Spice instant pudding and think that would be so good. It’s a holiday flavor by Jello.

I have made a similar recipe. It calls for 1//2 cup of oil. It is also delicious using a yellow cake mix with about 1 cup of chopped pecans or a chocolate cake mix with peanut butter chips. I like to spread the batter in a 9×13 pan and bake around 20 minutes (ovens may vary), then cut into cookie bars. There are so many possibilities.

Another great cookie recipe: HAMANTASHENS, a Jewish cookie for the holiday of Purim, but good anytime. Seven of my grandkids request this for their birthday present each year!
1 Box Yellow Cake Mix
1 cup flour
2 eggs
2 tbsp water (may need a bit more…add gradually, though)
Jam, jelly or fig jam, canned Solo brand prune or poppyseed filling. My gang prefers raspberry jam.
Combine flour, eggs, water with mixer until well blended and can be pressed together into a ball. Roll out on lightly-floured surface(half at a time) like pie crust, cut into 3″ circles. Add a tsp. jam or filling in center, draw up 3 sides to form a triangle. Pinch edges together to keep filling inside. Place on lightly geased cookie sheet and bake at 375 degrees for about 8-10 minutes, until golden brown. Makes about 36 – 40 cookies. (For the history of Purim, read the Book of Esther…Haman was the evil man who wanted to kill all Jews. The Jews won, and the cookies represent Haman’s Persian-style hat.)

when you use lemon cake mix, frost them with a lemon glaze of lemon juice and confectioners sugar…yum!

I attend a Senior Sunday School Class and we have our own small area to have coffee and treats between Sunday School and Church. Several of the women provide the treats and I always try to make something. These recipes are quick and easy and if you cook much I believe you are able to tell what they are going to taste like. Before the day is over, I am going to make the Poppy Seed bread as it is one of my favorites. I have a lemon tree so always make a mixture of lemon juice and powdered sugar to top it while still in the pan. Let it sit for a while before removing to a plate to slice.
