French Dip Sandwiches Menu With Cinnamon Roll Pudding
Tips
- For a really quick and easy meal, mix leftover veggies and cooked rice. Add a can of diced tomatoes. Warm and sprinkle with cheese. This is an easy way to make a full course meal in a few minutes with leftovers.
- School is in full swing now so that means mounds of peanut butter sandwiches. For a different treat for the kids, sprinkle mini marshmallows, raisins, chocolate or butterscotch chip or M&M’s in their sandwiches.
- There are many ways to use leftover roast beef but here is one way we often forget about. Grind up the roast, add a pickle or pickle relish and some mayonnaise and use it for a sandwich spread. I often grind up roast or chicken and, before I add anything to it, I put it in small containers and freeze. Then, when I am ready for a sandwich, I just thaw it and add my mayonnaise, pickle or whatever else I want to it.

French Dip Sandwiches, Boiled Potatoes and Carrots
Slow cook a beef roast with potatoes and carrots in a slow cooker or the oven. Slice the roast and serve on Hoagies or other large rolls. Serve with a small bowl of beef juice (“au jus”) from the roast to dip the sandwiches in.
A delicious way to eat the potatoes is to mash them on your plate, pour some of the “au jus” and a dollop of butter or sour cream or both on them. (Oh, yum!)

Cinnamon Roll Pudding
Save those one or two cinnamon rolls or donuts that dry out or get stale and toss them into the freezer. Then, you will always have them to make this yummy “comfort food” dessert. This would be a nice dish to serve as something different for a brunch.
2-4 cinnamon rolls or donuts (about 3 cups)
2 eggs
1 1/2 cups milk
3/4 cup sugar
1 tsp. vanilla
1/4 tsp. salt
1/4 cup margarine or butter, melted
2 Tbsp. honey
Caramel ice cream topping
Place torn cinnamon rolls into a 1 quart greased baking dish. In a bowl, slightly beat eggs and add milk, sugar, salt and vanilla and mix. Pour over cinnamon rolls. Combine honey and butter and pour over everything. Bake at 300 degrees for 1 hour or until lightly brown. Serve with caramel topping. Makes 4-6 servings.

Ground up roast also makes excellent beef hash, and ground up ham makes a good sandwich spread.
