Ingredients
1 lb. boneless, skinless chicken breast, cut into chunks
2 cloves garlic, minced
1 Tbsp. oil, olive or vegetable
1/2 cup apricot preserves
1/4 cup barbecue sauce
1/4 cup water
2 Tbsp. onion soup mix
Instructions
- Preheat oven to 375°.
- In a frying pan, cook chicken in garlic and oil until brown.
- Place in an 8 inch baking dish.
- Combine the remaining ingredients in a medium bowl.
- Pour over the chicken.
- Bake uncovered for 25-30 minutes until juices run clear.
- Serve over rice.
Easy Apricot Chicken Recipe
This easy apricot chicken recipe makes a delicious Asian-inspired chicken dish with boneless skinless chicken breasts that you can make with less than 5 minutes’ work. It’s quick and easy and the whole family will love it!
Ingredients
1/2 cup apricot preserves
1/2 cup dried apricots, halved
1 Tbsp. + 1 tsp. soy sauce
2 cloves garlic, minced
4 (4-6 oz.) fresh boneless, skinless chicken breasts
1/2 tsp. salt
1/4 tsp. ground black pepper
Instructions
- Preheat oven to 425°.
- In a bowl, combine apricot preserves, dried apricots, soy sauce and garlic. Mix well.
- Add chicken and coat well.
- Season with salt and pepper.
- Place chicken in a shallow roasting pan.
- Roast chicken for 30 minutes or until done.
- Baste chicken with the juices several times during cooking.
- Remove chicken to a warm platter.
- Pour the pan juices over the top.
- Serve warm.
