They look like snowballs and with the movie Frozen being so popular, they are perfect to serve at a “Frozen” party. They are a cross between a cookie and a dip, and are gluten free, sugar free, egg free and nut free, so they will fit into many different diets!
Coconut Balls Recipe
1 pkg. (8 oz.) cream cheese, softened
1 can (8 oz.) or about a cup of crushed pineapple, drained
2 1/2 cup flaked coconut
Beat cream cheese and pineapple. Chill for 30 minutes. Roll in 1 inch balls then roll in coconut. Chill 6 hours or over night.

Thank you for this recipe. I need to bring something to a get together and just made this. I decided to turn it into a dip, though, so I combined everything and will serve it with ginger snaps. Yum!
