This Spicy Rice Casserole Recipe can be used as a side dish or a main dish. Serve with cornbread, muffins, or dinner rolls and a salad and you have a full meal. It can also be made ahead of time and warmed up which makes it great for taking to pot lucks or get togethers.
Spicy Rice Casserole Recipe
1 lb. bulk pork sausage
1 tsp. ground cumin
1/2 tsp. garlic powder
1/2 cup onion, chopped
1/2 cup green pepper chopped*
2 beef bouillon cubes
2 cups boiling water
1-2 jalapeno peppers, seeded and finely minced
1 pkg. (6 oz.) long grain and wild rice
Cook sausage, cumin, garlic powder. Drain grease. Add onions and peppers. Saute until they are crisp tender. Dissolve bouillon cubes in the boiling water. Add to skillet. Stir in jalapenos, rice and rice seasoning packet. Bring to a boil. Reduce heat and simmer, uncovered, 5-10 minutes or until water is absorbed. Makes 4-6 servings.
*If it is Christmas, add half red and half green peppers. For Valentines Day, use all red peppers and for St. Patrick’s day, use green.

am bored again with food – was reading this recipe and cant see any rice seasoning packet mentioned -what would it be – can i use a teaspoon or 2 of taco seasoning??

You don’t use a seasoning packet in here. The seasoning comes from the garlic pwd., cumin, onion, jalapeno peppers, bullion etc. You can add salt and pepper to taste your taste.
