Ingredients
1 chicken bouillon cube
1/2 cup water
1 cup rice, cooked
1 Tbsp. (or less) taco seasoning
1 clove garlic, minced
1 cup tomato sauce
Instructions
- Preheat oven to 375°.
- Dissolve bouillon in water.
- Mix all the ingredients.
- Bake uncovered for 30 minutes.

Hi,
Is there any chance that the recipe should say 1 cup of rice, Uncooked? I tried mixing together the 1 cup of rice, cooked, as stated in the recipe (and the other ingredients) and it was very thin and soupy. Did I do something wrong? Thanks!

Did you use tomato soup? That may have made a difference. You might try adding less water or use tomato paste instead of sauce if you keep having problems. We just made it with the way the recipe says and it worked ok so am not sure what else could be wrong? Wish I could be more help? Holler if you have another question.

I like to use one cup of rice/two cups of water to make my Spanish rice.
Add a package of taco seasoning, and a can of HOT, spicy chopped tomatoes. I do mine in the microwave in a covered class bowl. Comes out nice and tender. You can add chopped, cooked ground beef with some onion in it and make it a meal! Throw in some chopped fresh cilantro and enjoy!

Is the 1 cup rice cooked before mixing with other ingredients OR is it 1 cup RAW rice cooked which would make about 2 cups?

It says 1 cup of cooked rice you mix in it.

Following the directions, that was not enough liquid. At the end of the recommended cook time, the liquid was absorbed and the rice was still crunchy. I had to add another cup of water and cook about 20 minutes longer. It was good, but definitely needed the extra water.

D the recipe calls for you to use cooked rice not uncooked rice. That is why you were having a little trouble.
