Even though they are most commonly served with breakfast, they are great served with hot lunch or dinner meals. Fried potatoes are a great complement for barbecued chicken, beef or pork.
This fried potatoes recipe calls for bacon grease or margarine, but you can also use oil. We don’t recommend using butter because it burns too easily for this type of recipe. We prefer using bacon grease, because it gives the fried potatoes a delicious rich bacon seasoned flavor and baking grease works very well for frying.
You can cook these fried potatoes to be brown and crispy, or a little softer if you prefer. I like to make them a little more crispy as a slightly crispy texture is nice and mixes well with other breakfast food. If you like your potatoes less crispy, cook as long as you like.
Serve with bacon, eggs, toast or pancakes for a delicious big breakfast. You can also serve them alone and top with sausage gravy from our biscuits and gravy recipe.

This easy fried potatoes recipe makes delicious fried potatoes perfect for any big breakfast! They’re a great way to serve potatoes that are a little more fancy and a lot more delicious than regular hash browns! Fried potatoes are great with other meals, too, so be sure to try them when you need a great side for chicken, beef or pork.
- Yield: 4-6 servings
Ingredients
2–3 Tbsp. bacon grease or margarine
6 potatoes, sliced or cubed
salt and pepper
green onions, chopped (to taste, optional)
parsley (optional)
Instructions
- Melt bacon grease or margarine in a frying pan.
- Add the potatoes to the pan.
- Cook over medium heat.
- Cook potatoes, toening occasionally until golden brown.
- Stir in green onions, if desired.
- Remove from pan.
- Garnish with parsley, if desired.
- Salt and pepper to taste. Serves 4-6.

Do you have to cook or microwave the potatoes? Mine started to get overdone and yet the insides were kinda tough….PS I am not a very good cook but am trying to get better!

JC You don’t have to cook or microwave them but turn the heat down if they were browning too quick and then not done on the inside. But that being said it might be better since you are just learning to cook to microwave them for a couple of minutes then slice them. This way they won’t take as long to cook and the insides will cook better too. Also you are the type of person I love helping the most when you said “am trying to get better” keep at it. When I first got married I barely knew how to fry an egg. :) it just takes practice and not giving up and you will get there.
