These individual little mug cakes are amazing and ready to eat in one minute! They are perfect for whenever you feel like a treat without all the fat and calories that cake can have. Genius idea!
3, 2, 1 CAKE
1 box 1-step Angel Food Cake Mix
1 box Cake Mix – Any Flavor
2 Tbsp Water
In a Ziploc bag, combine the two cake mixes together and mix well. For each individual cake serving, take out 3 Tablespoons of the cake mix combination and mix it with 2 Tablespoons of water in a small microwave-safe container. Microwave on high for 1 minute, and you have your own instant individual little cake!
KEEP the remaining mug cake mixture stored in the Ziploc bag. You can top each cake with a dollop of fat free whipped topping and/or some fresh fruit.
Helpful Tips:
This recipe is called 3, 2, 1 Cake because all you need to remember is
3 tablespoons mix,
2 tablespoons water,
1 minute in the microwave!
TRY various flavors of cake mix like carrot cake, red velvet cake, pineapple, lemon, orange, etc. Just remember that one of the cake mixes has to be the angel food mix. The other is your choice. The flavor possibilities are endless!
NOTES:
The best thing is, you open both cake mixes into a gallon storage bag, one that ‘zip locks’ or ‘self-seals’, or a container that seals tightly, shake the two cake mixes to blend and then make the recipe. Storage of the mix is simple. Put it on a shelf. There is no need to refrigerate, since the mix is dry.
Angel food cake has egg whites so if you are allergic to eggs you can’t use this.

this is awesome .. esp for a person who lives alone or doesnt eat alot of sweets but would like to have something sweet once in a while ..
i asked my sister (she lives alone) what does she do when she would like a piece of cake and doesnt want to bake the whole thing .. she told me she usually bakes cupcakes and then takes what she wants and gives the rest to her daughter and grandkids ..
i noramlly bake the cake but bake them in those super tiny loaf pans and share wiht the neighbors ..
but i like this idea too ..

That’s a good question. I think I’ll try using paper liners in the mug. They won’t cover the entire mug, but the bottom will be, and that’s where the mess would happen…I think. : )

Annie – If you are eating the mug cake directly out of the mug, you do not need to grease the mug. However, if you want to pop it out of the mug before eating, you will want to spray with non-stick cooking spray, or maybe use a little oil.

I’ve been wanting to try this. I wonder if it would work just as good if the cake mix was one of the sugar reduced mixes, I can’t remember if they are actually sugar-free or not, but reduced for sure (“P” brand).

I’m not sure Melissa. The main thing I do know is it is important to use the angel food cake and that is probably because angel food cakes are mostly egg whites and you need eggs for a cake to rise, it’s texture etc. That is why you don’t have to add eggs to this recipe.

I’m sorry Melissa I have to tease you just a little but it is a good thing you are using sugar free cake mixes with all the cakes you are making. HA!HA! Too funny. If you are going crazy with all the cake recipes can you imagine my life having to look a tons of yummy recipes each day. I usually go in two directions by the end of the day and that is I want to inhale everything in the kitchen or I am so sick of looking at food I can’t make myself eat. Thank goodness I have more of the latter days.

Can’t wait to try this. With a diabetic husband, too much cake is not a good thing to have at our house. My husband does not have much willpower and while he won’t eat a large piece of dessert at one sitting, he will eat a little every time he comes into the kitchen. I always thought angel food cake had very little sugar.
People who ate it felt so virtuous but I just looked up recipes for it on the net and 1 1/2 cups of sugar to 1 cup of flour sure has changed my mind.
Did find a sugar free gluten free one but the other sugar free were 1 1/2 cups of splenda. Better but no cigar.
oh well guess I will stick with no cakes in the house. I don’t really miss them but thought it might be nice for my husband.

Angel food cake was first considered a good diet cake because it has little fat but the same way so many things get twisted over the years people just started thinking it had no sugar too. This is the perfect example Lynda of why why I keep saying (not to you but others) be careful because so many people who think they are eating healthy and foods with few calories really aren’t and don’t realize it.
I have seen people on a diet inhale 4-5 pieces of celery thinking they can eat all they want of it because it has no calories but a 7 in. piece of celery has 35 calories so they have just eaten 140 calories.

Exactly why this little cake will be so great. Logging what you eat does work, it’s surprising how many calories ‘sneak’ in when you aren’t paying attention. Just have to figure out how many calories 3 TBSP of this cake mix will be. Will Google it :)

I like one piece of angel cake with strawberries and the juice and whipped cream all over it.
Then not again until strawberries are in season next year. But when my birthday came around for about 4 years my mother paid for the ingredients and icing for an angel cake with a barbie doll stuck in the center hole and the cake became her ball gown.
Never wanted to cut the cake but everyone else outvoted me so we ate cake.
I sent this recipe to my son. His eldest has started cooking simple things for meals and he might like to try this.
He is babysitting for 2 nights a week for his 2 younger siblings.
This doesn’t happen for long but with tax season starting and his mom working for the tax dept. and ray working away from home 2 nights are taken care of.
Children sure do get older and more responsible every generation.
Or maybe we are reverting back to when parents worked on farms and the older always looked after the younger ones.

Years ago the angel food cake mixes use to come with parts of the ingredients separated in different packets. You would whip up the egg part then fold in the flour part etc. I don’t think they are very common any more and most are just the 1 step mixes.

For the moment you can just copy it and put it into a word document. We are working on installing a program to print just the recipes but it’s low on the to-do list for Mike so I’m not sure how long it will be.

That’s what I do, Tawra. I keep a word doc with recipes and just copy the new ones and add them at the bottom. It saves lots of paper because I can then print just the page I need when I want it.

i was telling my daughter of this recipe .. and she loves it .. bc its nice to be able to make a “cup” of cake once in a while esp if u dont want to make a whole one or just cupcakes ..
i did ask hubby if u wanted to make a cake with using just half of the ingredients how would u go about doing htis.. and well we still havent figured out about the eggs but now this is even better ..

Here’s my quick and easy recipe I use all the time:
Raisin Cake
Add two cups of water and one cup of raisins into a saucepan to cook. You will be cooking this until the water is down to 1/2 as much.
Measure together:
2 cups flour
1 cup sugar
ginger, cinnamon, allspice, as you like it. 1/2 teaspoon of each will do.
2 heaping teaspoons baking powder
To the boiling mixture of raisins which have now cooked to 1/2 the amount of liquid add 2 heaping Tablespoons shortening.
To the liquid add 1 teaspoon baking Soda.
Immediately pour this bubbling mixture into the dry ingredients and stir well. Add a little more liquid if the mixture is too dry. You will want it to pour out of your bowl into a cake pan you have sprayed with Pam.
Cook until done in a 375 degree oven, 20 to 30 minutes or until it has pulled away from the sides of the pan and a toothpick inserted in the middle comes out clean.
This is a quick, very good tasting cake and is excellent to prepare upon short notice.

Thanks so much for sharing! I love this idea. I am the guilty party with a HUGE sweet tooth in my house. The rest of my crew could really care less about sweets unless they are in homemade chocolate chip cookie form. :) I love a good cake and the worst thing about a good cake is that once it is made, it just isn’t nearly as good as when it is fresh. So of course you must eat it and eat it fast and then feel bad because you know your Sunday skirt just isn’t going to look right, so you try to work off a few of those deliciously, indulged in pounds and turn around and there is the rest of the cake. Vicious circle really. :) I am so excited because now I can have my very own small cake when the cravings are horrible. I am saved!…and so is my wardrobe.

I am a diabetic and live alone. When first saw this recipe I knew I had to try it. Mixed it with strawberry cake mix and it cook in a 5oz desert cup. Had to cut the time back to about 50 seconds in my microwave. Taste good with just a little squirt of whipped cream on it.

You can do the same thing with just regular cake mix of your choice of flavor. I like to add toppings or mix-ins, my favorite is lemon cake with bits of cream cheese and a spoonful of strawberry or raspberry preserves swirled in before microwaving. Chocolate chips are good with chocolate cake, either in the batter or sprinkled on top right after its done, let melt then spread over the top. A drizzle of caramel or fudge sauce on top is yummy, too!

The cake mix has the leavening in it. Basically what you are doing is baking a cake from the mix but instead of putting it in a cake pan you are just putting a little bit in a mug. If you were using the cake mix as usual you wouldn’t have to add leavening either.

Since your original post of this recipe, I have been experimenting. I love to keep a chocolate mix made up and a white or yellow mix made up. I sometimes will add a few chocolate chips, peanut butter chips, well drained canned fruit like chopped peaches or pineapple or sometimes a brown sugar and cinnamon streusel. You can use all kinds of different add-ins to change it up. I made up a batch of each flavor and I also made a batch of cocoa mix to send back to college with my nephew for the winter/spring semester. He called me the other night and is already out of the cake mix and wanted to know the recipe so he could make up another batch. He and his room mate think it is wonderful to study and have a mug of cake. His favorite? He likes the white cake mix with a maraschino cherry and uses a little of the juice to moisten his cake.
