Sausage And Egg Brunch Casserole Recipe
Sometimes the evenings get so filled around the holidays that it might be easier to have a brunch. If that is the case, here is a good casserole to to make for your brunch.
Note: To speed things up in the morning, cook your sausage the night before and also mix your eggs, milk and salt the night before. Then you’ll only need to layer everything in the morning.
Breakfast Brunch Casserole
1 (8 oz.) can refrigerator crescent rolls
1 lb. ground pork sausage
1 cup cheddar cheese, grated
1 cup mozzarella cheese, grated
6 eggs, slightly beaten
1 1/2 cups milk
1/2 tsp. salt
Unroll rolls and press into the bottom of a greased 13×9 pan, pressing perforations together. Bake at 375 degrees for 6 minutes. They will puff up. Remove from oven and turn down to 350 degrees.
Brown sausage and drain. Spread over crust. Top with cheeses. Combine eggs, milk and salt and pour over everything. Bake for 35-40 minutes until top is brown. Garnish with tomato wedges.

This was deliscious. I prepared it according to the recipe but added a few dashes of cayenne pepper to the sausage.I served this with a side of steamed asparagus and it made the perfect meal.
Next time I may add some onion or green pepper to the sausage as it’s cooking. Amount of eggs and cheese was just right.
