Here are some suggestions that will help you simplify and save money on your breakfasts.
- Make a double batch of muffins and bake in a 9×13 inch pan.
Then cut into pieces the size of a piece of cake and serve. This will save you from greasing and washing individual muffin tins.
- Serve oatmeal in a fancy glass.
Use a sundae dish with fruit, granola, coconut, or brown sugar on top. This is a treat that makes breakfast more exciting for the kids.
- To make “instant” maple and brown sugar oatmeal:
Before bed add oatmeal and milk or water to a bowl with 1 drop of maple flavoring and brown sugar to taste. Let it sit overnight in the refrigerator. In the morning microwave for 90 seconds and enjoy!
- Children’s morning routine:
Don’t let kids eat or watch TV in the morning until they first are dressed and ready for school and have their beds made and their rooms picked up. Then let them eat breakfast.
- Save bacon grease
Use it for frying eggs, flavoring corn bread, muffins or for greasing pans.
- In coffee cake
Substitute equal amounts of apple juice for the milk, then add 1 1/2 tsp. ground cinnamon.
- In syrup
Stir in 1-2 tablespoons of orange marmalade into a cup of warm maple syrup. It perks up ordinary pancake syrup.

My comment is actually a tip about saving bacon grease…Freeze it.
I only keep a small amount in a container in the fridge…the rest is frozen in small containers.
Our favorite use for it is for frying potatoes…My hubby’s and DD’s favorite!
Love your website and blog!!!

I love my bacon grease. I like to use a spoonful in in my baked beans. It cost less then using bacon but you still get the bacon flavor. Another thing I use it for is when I am making dinner rolls from scratch I grease the bowl they are to rise in with bacon grease. They don’t taste like bacon but it some how makes the bread flavor even better.
Like you said Patricia I wouldn’t even know how to fry my potatoes without bacon grease. Good idea to freeze it. I use to use it up so fast I didn’t worry about it going rancid and it can keep forever just in the fridge but now that the kids are gone I don’t go through it so fast so that is good to know.

Rice and raisins..just make brown or white rice, stir in raisins and sprinkle with brown sugar. YUM

Forgot to add, pour milk over your rice and raisins.

I was wondering just yesterday whether I could freeze bacon grease or not. I make a pound of bacon every Sunday and use what we don’t eat for meatloaf and omelets later in the week. But the bacon grease often gets tossed because I don’t have enough use for it anymore. So glad to know I can freeze it in small portions and use as needed. I think I will put small dollops on a cookie sheet and freeze and then put the portions in a small plastic container. Thanks for the information, Patricia.

I don’t see why you couldn’t. I would spread it on a cookie sheet topped with something like a silpat if you have one. Freeze, then break off chunks, put in freezer bags.

Freeze bacon grease in ice cube trays. When frozen, pop out the cubes and store in a freezer bag.

Good idea to freeze the bacon grease. I always strain my bacon grease through a tea strainer first.

I don’t think that bacon grease freezes hard enough to have to freeze it in little hunks. You can probobly just scroop your desired amount out with a knife. Another thought would be to line your icecub tray with plastic wrap and pour bacon drippings in so you have ?2 tablespoon? cubes of it to add to recipes. When hard, store in a zipper bag in the freezer. If you don’t have enough to make a dish, just use half bacon and half some other fat for the flavor. I can’t think of why I would want to strain it though. I would want every little morsel of flavor. Am I missing something?
Jill
I don’t strain mine either because I too love the morsels. I don’t freeze my bacon grease either but just keep it in the fridge for months and it does just fine too if you don’t want to freeze it. I know one thing I don’t know how to cook without using my bacon grease. Eggs don’t taste the same, pancakes, hash browns, baked beans, French toast. It is like I say I don’t know what I would do without it. Now I don’t use much when I do use it – maybe only a teaspoon, 2 at the tops.

A favorite quick breakfast for me is French toast. I have always loved it.I make one or two pieces depending on how hungry I am. I had to laugh at what you said about making children get dressed, pick up their room and make their bed before eating breakfast. For my grandson Brody to accomplish all that he would have to get up at 4:00! He is like his dad, slow as molasses!

Shape cold oatmeal into a log and put it in the fridge. Next morning slice it about 3/8 inch thick slices and fry to golden brown. Serve with syrup. Yum!
