1/2 cup pumpkin
3/4 cup milk or vanilla yogurt

4 ice cubes
whipped cream (optional)

Since hubby doesn’t like pumpkin, I’m always looking for ways to treat myself with this gorgeous autumn flavor, even it’s only with a candle!! Will try the smoothies and make the pancakes (can always freeze the leftovers!)

Linda since I live alone I hate going through all the work of making a pumpkin pie just for me alone so I have started just making up the pumpkin pie filling and putting it in a greased baking dish and bake it like a custard on about 350 degrees for 30-40 mins. until a knife comes out clean.
It is so easy just to mix up and toss in a pan almost as easy as a smoothie and boy does the house smell good while it is baking.

We used some leftover fresh pumpkin last year for pumpkin bread. Works well, but just remember to cook the pumpkin down well (and remove the strings).
Pumpkin tastes good by itself (it is a winter squash, after all). And don’t forget the seeds!
